Marcella Hazan Inspired Tomato Sauce
Inspired by Marcella Hazan and my tomato shirt from Polychrome goods ( I get commission through any sale you make through these links). I can’t tell you how delicious Corto tomatoes are and what makes them pop even more are the large hunks of onion, garlic, and butter. My mom dries Italian long hots on the counter so I added one too— for good measure, ya know!
Yield: 2 servings
Time: 30 minutes
Ingredients
2 tablespoons extra virgin olive oil
1 head garlic, cloves smashed
1 small onion, quartered
16 oz. daterini tomato (corto)
kosher salt
1 small dried Italian long hot or 1 teaspoon red pepper flakes
2 tablespoons butter
Method
In a medium sauce pot over medium high heat, heat olive oil. Add onion and garlic, cooking stirring consistently until the onions begin to soften and separtate into petals, 10 to 15 minutes. Add tomato and season with salt and add chili.
Continue to cook until the tomatoes break down, another 15 to 20 minutes. Remove chili and stir in butter until melted. Taste for seasoning.
Store for later use or serve tossed in pasta right away.
